SOYA CURRY


           WHY is this a super food which every woman with menstrual irregularities need. Soya is one of the sources of natural phytoestrogens. Here I have used Star anise (அண்ணாச்சி பூ / തക്കോലം  - another phytoestrogen), cinnamon (பட்டை/ കറുവപ്പട്ട  ), Ginger which are so beneficial in treating the PCOS,  and other

INGREDIENTS:

Soya – 1/2cup
Onion – 1 small sized (chopped)
Ginger garlic paste – 1 tsp
Chilli powder – as required
Turmeric  powder – ½ tsp
Garam masala powder – ½ tsp (optional)
Salt – as required
Oil – 1 tbsp
Water – ½ cup

To grind

Onion – 1 small sized (optional)
Tomato – 2 medium sized

For tempering

Mustard seeds – ½ tsp
Cinnamon stick – 1 inch
Star anise – 1
Clove – 1
Curry leaves – 1 sprig
Finely chopped fresh coriander  for seasoning

METHOD:

  • Soak the soya beans overnight or pour hot water (not boiling water) to the soya and cover it with lid. It will be ready to cook within 1/2 – 1 hour.
  • Pressure cook the soya beans with salt added
  • Grind 1 onion and 2 tomatoes into a fine paste and keep it aside
  • Heat oil in a pan and add ingredients given above for tempering
  • Add chopped onions to it and saute
  • Add ginger garlic paste (or smashed ginger and garlic cloves) and saute till raw smell goes off.
  • Now add onion tomato paste and saute it well till the paste becomes non sticky to the pan.
  • Now add boiled soya beans, chilli powder, turmeric powder, garam masala powder and salt.
  • Add half cup of water (to make it to a gravy consistency) and cook for 5 mins.
  • Switch off the flame. Add chopped coriander leaves and cover it with a lid for 10 mins to let the flavours blend.

      Serve it with white rice for lunch or with any rotis for lunch/dinner !
