THIRATTUPAL WITH PALM JAGGERY

Ingredients:

Milk - 1/2 litre
Palm jaggery - 1/4  to 1/2 cup as per your taste
Water - 1/4 cup

Method:

1) Take a heavy bottomed wide pan and boil the milk at high flame.
2) Once it boils, reduce the flame and regularly stir it with a spoon.
3) In another pan, take the finely powdered palm jaggery (make it fine in a mixer or smash if it is solid crystals).
Add water and boil just till the jaggery dissolves completely. Switch off the stove and filter the syrup with a strainer to remove dirt.
4) Now again boil the filtered syrup till it reaches one string consistency.
5) When your milk has reduced to 1/3rd of its quantity, add the above prepared jaggery syrup and constantly stir till we get the final desired consistency as shown in the picture.




You shall serve it warm ☺

NOTE:
1) I prepared jaggery syrup to remove impurities. If you feel that your jaggery is pure without any impurities, you shall add jaggery
2) You shall add cardamom powder for extra flavour.
